These aren’t just mince tarts. They’re the kind you remember.

At @irrewarra_bakery everything starts from scratch and it shows. The pastry is all butter, beautifully short and melts in your mouth. Made with local Moorepark free-range eggs, fresh unsalted butter from the Colac milkman and flour from Laucke’s Bridgewater Mill, it’s gently mixed, rested and finished with Irrewarra’s signature star lid for the perfect balance of pastry to filling.

And the filling? That’s been in the works since August. Granny Smith apples are grated and combined with plump vine fruits, macerated in proper French brandy, citrus juice, zest and spices. It’s finished with their own blood plum jam, made from organic plums grown in founder Bronwynne’s orchard.

No commercial mince. No shortcuts. Just time, care and incredible local ingredients. Baked until golden and cooled just so, these are mince tarts done properly. The kind where one is never enough.

If you’re on grazing board duty this festive season, this is the blue cheese everyone reaches for first. @taragocheese Shadows of Blue is mild, sweet and beautifully creamy, made from cream-enriched milk and inoculated with the iconic Penicillium roqueforti for that perfect gentle blue character.

Each cheese is carefully hooped, salted, cellared and finished in natural beeswax to lock in moisture. It’s hand-spiked so the mould can breathe and develop its signature flavour. After around two months of maturing, the result is soft, smooth and creamy through the centre, with delicate blue lines that bring a slight, balancing bitterness.
