nutraorganics Thai Beef Curry 

The kind of slowcooked comfort food that makes the whole house smell incredible. Rich coconut curry, tender beef and plenty of warming flavour, finished with fresh lime, herbs and chilli.

Ingredients:
• 800g beef chuck steak
• 1 onion, chopped
• 2 cloves garlic, minced
• 3 tbsp red Thai curry paste
• 2 x 400ml cans coconut milk
• 1 tsp turmeric powder
• 2 tbsp peanut butter
• 3 tbsp @nutranaturals Beef Bone Broth Concentrate Native Herbs
• 1 cup water
• 1 lime, juiced
• 2 cups jasmine rice

To serve:
• Fresh coriander
• Spring onions
• Red chilli
• Greek yoghurt (optional)

Method:

1. Heat oil in a large pot and brown beef in batches. Remove and set aside.
2. In the same pot, cook onion until soft. Add garlic and curry paste and cook for 1 minute.
3. Add coconut milk, turmeric, peanut butter and nutraorganics Beef Bone Broth Concentrate. Bring to a simmer.
4. Return beef to the pot, cover and simmer gently for 2.5 hours, stirring every so often. Add water if needed.
5. Once the beef is tender, stir through lime juice.
6. Serve over jasmine rice and top with coriander, spring onions and chilli.

Cool Medjool started in a Northern Beaches kitchen after founder Annabelle fell in love with Medjool dates during pregnancy with her twins. What began as a simple combination of dates, raw cacao and nut-based fillings quickly became something much bigger. Together with longtime friend and chef Matt, the team created their own signature chocolate using just cacao and dehydrated dates. No refined sugar, just naturally sweet, rich chocolate packed with all the goodness of whole dates.

Every Cool Medjool is organic, gluten free, plant based and made with fair trade cacao, all wrapped up in home compostable packaging too.

They’re indulgent, wholesome and dangerously easy to eat straight from the fridge.

@madeleinesmeals LEEK & BURRATA PASTA 🍋🍝💥

Sweet buttery leeks, fresh lemon and creamy burrata all tangled through silky pasta… this is one of those “accidentally ate two bowls” kind of dinners.

What you’ll need:
• Pasta 
• Butter 
• 1 brown onion, finely sliced 
• 2 garlic cloves, minced 
• 1 leek, thinly sliced 
• Zest + juice of 1 lemon 
• Dried herbs 
• Chilli flakes 
• Fresh parsley 
• Burrata 
• Salt & pepper 

How to make it:
Cook your pasta until al dente, reserving a splash of pasta water.

Meanwhile, melt a generous knob of butter in a pan and cook the onion and leek low and slow until soft, sweet and buttery. Add garlic, dried herbs and chilli flakes and cook until fragrant.

Add lemon zest, a squeeze of lemon juice and a splash of pasta water to create a glossy sauce. Toss through the pasta and season well.

Finish with torn burrata, parsley and extra chilli flakes if you like a little kick.

Simple ingredients. Big main character energy. 🍋✨P
